Elephant Foot Yam locally known by many names in India like Ol, Oal, Ul Kosu, suran, jimikand etc. is a giant taro root with a rough brownish cover and soft white flesh inside. It tastes similar as potato, has a mild flavor. Though its appearance is not much common in most of the cuisines but its presence in India can be traced in the cuisines of Assam, West Bengal, Orissa, parts of UP and MP and several other states.
Ol ka achar
The preparation of Ol ka achar is a bit tough. Oal is hard to cook, because sometimes it leads to itching while cutting it in the raw form. That is one of the main reasons people avoid this vegetable most of the time. But you can’t avoid the health benefits of this amazing vegetable. The ingredients that are used in this homemade Suran ka achar are- boiled Oal (cut in small pieces), salt, turmeric, mustard oil, garlic, chilies and spices. Prakrity’s homemade Oal ka achar is an ideal pair with rice and daal, also goes well with roti. Just be careful that you are using a dry spoon in the bottle and put the cover tightly. Best use before 24 months from the date of manufacture.
